The Chateau Lyonnat covers 52 hectares primarily planted to Merlot, but throughout history this legendary land has been made up of more than 180 hectares and has provided wine to the Vatican. It's a fascinating place in the south-eastern part of Lussac-Saint-Emilion, a hillside vineyard of limestone clay soil which is one of the oldest estates in the Lussac-Saint-Emilion AOC.
At harvest, the grapes are sorted to eliminate any undesirable berries, fully destemmed and crushed into temperature controlled vats. Natural yeasts initiate fermentation, which generally lasts 10 days. A long maceration of typically three weeks follows, extracting r

傲世莊園佔地52公頃，以種植梅洛為主，不過歷史上這個傳奇地方已經取得了超過180公頃的土地並為梵蒂岡提供葡萄酒。葡萄園是座落於聖艾美隆-呂薩克區，位於東南部一個迷人的山坡上，土質以石灰石粘土為主。聖艾美隆-呂薩克區亦是法定產區中最歷史悠久的莊園之一。
葡萄在收成後會進行篩選，以剔除未合乎標準的果實，及後葡萄會完全去梗和壓碎再儲存在有溫度控制的大桶內。在桶內的天然酵母會發酵葡萄，這一般會持續10天。經過三週的浸泡後，葡萄的豐富色彩、風味和單寧就會被提取。然後葡萄酒會移到新的橡木桶，以乳酸發酵再陳釀18個月。
